The issue is that when I plug my amstrad cpc in to my (fairly new) 1080p Dell widescreen monitor it just displays a white screen and says 'no sync detected' at the top of the screen.
Interestingly when I plugged the same setup in to my LG tv I get an image (and instead of one solid light on the device the other led blinks green)
It doesn't look like there is any problem with the monitor itself as the menus are displayed and that is separate from the capture side that actually digitises the incoming video from the Amstrad and the type of monitor shouldn't affect that.

Can you post a screencap of the System Summary page as that will show what hardware is detected and what version CPLD is running.
e.g. it might be detecting the wrong type of hardware due to a bad connection.
Also use the save log and EDID option and post Log.txt

Do you still get a working Amstrad image with the LG Tv as perhaps an internal connector was disturbed when you moved between the two monitors as I can't think of any other reason why it would work on one monitor and not on the other when it can still display the menus.
