If you've actually got the cub interface board then PL101 on a regular CUB has jumpers on it for switching between TTL and Analogue video and I think for your Apple 2 interface you simply remove those jumpers and install the cable between it and the interface board - should be an easy install!
IIRC there are couple of other jumpers related to sync settings and if you get sync problems then these might need changing.
PL101 is located just to the left a bit underneath the neck board.

The composite PAL input board does a similar thing and on that one, the regular TTL input DIN gets patched onto the PAL interface and with a switch to select between Composite on BNC and TTL
