Writing to floppy images should work, but only written back to file when the image is ejected/changed.
I'm aware of an issue with the 8271 controller with floppies in each drive, it's on my never ending todo list. Alternatively you can use BBC B+ which has a 1770 controller with the appropriate version of the ZEP100:I think I looked at your Easy Junior when you first posted the files, and concluded it requires a hard drive to install to (I could be wrong).
