My experience with my OSSC is that my expectation of it being a complete master of video didn't materialise either.
It can't do mode 7 and I never got a picture when I tried it with a VCR or Sky box. It's a faff to tune in as every individual machine you connect to it needs it to be adjusted.
It worked pretty well with the Domesday machine and a small number of 32-bit Acorns I tried it with. There's a very brief (honestly) picture set here from when it first arrived, the middle 3 pictures of which are screenshots from the A3010, but unfortunately I didn't note the screen mode being used:

It seems I haven't tried it with the A5000 specifically, I can have a go in the "next few days" (could be up to 10 years, but hopefully not) with mode 31 and see what happens.
