With the exception of those mentioned above, the codes should be the same VDU codes that are used when there is no Z80 second processor, i.e. the ones for which there is a table in the back of both the BBC Micro User Guide and the Advanced User Guide.
The functions added by TERMOUT are those that are notably missing from the usual set, i.e. real terminals often do have codes fro "clear to end of line" and "clear to end of screen" and the BBC micro VDU codes do not include these functions.
The 80x32 text screen is because the ROM in the Z80 puts the screen into Mode 0 by default. You can change the mode if you wish. I think there may be a MODE command to do this on the disk, you can use the MODE command from within BBC BASIC or send the appropriate code any other way: it's hex 16 followed by the mode number.
