So I've figured out the Floppies!
Turns out all I needed was to run the command *OPT 4,3 to make the disk bootable after *MCOPY-ing the files over. So now I can write single-sided images on both sides of my disks. They're still not "floppy" since I don't have any disks with two index holes. They're not very common in the U.S., since the primary machines that used them the longest were Apple IIs, Atari 8-bits, and Commodores. None of which make use of index holes.
In any case, I can still specify the side by drive number, and have been able to boot from both "Drives" 0 and 2.
As for my sideways issues... I'm still working on that. So far, I've only found two "modern" options. The first is on eBay:
https://www.ebay.com/itm/324173991075?_ ... R_zXn7POZA
Looks good, but with shipping, it's a bit expensive to import. Almost $70.
The other is from BoopBip.com (love the name).
http://www.boobip.com/hardware/32kb-ram-32kb-rom
http://www.boobip.com/hardware/128kb-flash
These seem a bit more affordable, even with shipping. But, would require two different boards to achieve the same functionality as my original (but sadly broken) SideWise board.
Am I missing any? If so, maybe someone could recommend some websites/stores/resources/whatever for BBC hardware/software. Googling from the U.S. keeps turning up stuff for the "BBC micro:bit" instead.
